I'm pretty sure (but only pretty sure) that 说得对 is correct but that lots of native speakers also use 说的对? I'm with you on the more confused...

I can pretty confidently confirm that it should be 你说得对, coming from Cantonese where 得 and 的 are pronounced differently -- I've never once heard anyone use 的 (or its Cantonese equivalent) to express this meaning!

Both are definitely in use, and I keep seeing conflicting opinions on which is the "more correct" one, but going by this, I guess probably 你说得对 is the one that used to be correct, and people just mistakenly used the 的 version so much, it became established and now people who always used it think it's the original?

Sounds very likely! I expect every language has this kind of thing, I know both English and Japanese do.

I would assume so! To me it seems to fit the usual pattern of [verb] + 得 + [manner/quality of verb], like 看得清楚.
